Spaghetti Bolognese


Serves approx 2-3 pp


Ingredients:

300g Minced Beef (the nicer the better)

1x Can chopped tomatoes

1x Bunch parsley chopped

1x White onion finely diced

3x Garlic cloves



300g approx x Chestnut Mushrooms (amount to your preference)

8x Cherry tomatoes

6x Diced sun dried tomatoes or 1 Tbsp of sun-dried tomato paste.

3x Tbsp Worchestire sauce

3x Cubes of Dark Chocolate

1x Tbsp Tomato puree

1x Beef stock with 200ml water

250ml Red Wine

¼ tsp Chili Flakes



½ tsp Paprika

2x sprigs of Thyme and rosemary or 1 x Tsp Mixed herbs


Parmesan Cheese

Spaghetti


Please note that if you want to go veggie you can swap the mince for either vegan mince or lentils.


Directions:

  1. Heat a saucepan over a medium heat with a tablespoon of oil and add the onion and garlic. Cook without colouring for a few minutes, then add the beef mince and season with salt and pepper.

  2. Once browned add your wine, chopped tomatoes and remaining ingredients. Keep stirring on a low heat.

  3. Reduced into a thick rich sauce, season well with salt and pepper, add a little parmesan to the sauce.

  4. Cook your pasta, honestly any pasta goes with this sauce.

  5. Serve with parmesan and chopped parsley.
